BBQ Sauce

(it's so damn hard to photograph sauce)

When I want barbecue sauce at home, I like to make a simple ketchupy one with Dr. Pepper and Jäger. It's pretty easy to make and customize to your tastes. I bet a cola and orange liqueur sauce would kill.

 

WHAT YOU NEED

  • 250ml (1 cup) diet dr. pepper
  • 1 tbsp jäger
  • 8 tbsp (1/2 cup) ketchup
  • 1 tbsp worcestershire sauce
  • 2 tsp white vinegar 5% (the basic kind)
  • 1 tsp american yellow mustard
  • a dash of red hot sauce (your fav one ≖‿≖ )
  • 1 bay leaf
  • 4 tbsp (1/4 cup) brown sugar
  • 3/4 tsp adobo
  • 1/2 tsp chile california powder (sub: 1/4 tsp paprika + 1/4 tsp cayenne)
  • 1/4 tsp onion powder
  • 1/8 tsp chinese five spice (totally optional, but it does round things out if you have some!)

HOW-TO

  1. Put everything in a small pot, bring to a boil, and whisk it all together.
  2. Reduce heat to medium and let cook until it's almost the consistency you want. It will thicken a little more as it cools and you can always cook it a little more or thin it out with water to adjust, so don't trip too much about it.
  3. Whisk in the Jäger and let cook a minute or two more, just until the boozy taste cooks off.
  4. Pour in a jar and keep it in the fridge. It'll keep for a while. I don't know how long.
