The Japadog

Canis calidus subsp. vancouverensis
(terimayo on the left, okonomi on the right)

Japadogs are Japanese-Canadian fusion hot dogs, and they might just be my favorite dog of all time. Like the good X-Files seasons, they're from Vancouver. There's a bunch of different kinds. As I make and try them, I'll add them here. I don't have much else to say about them. I haven't been to British Columbia since I was a little kid, and I don't remember much about it.

Five things I know about British Columbia off the top of my head right now:

  1. The X-Files (s1-s5)
  2. Highway of Tears
  3. Capilano Suspension Bridge
  4. Japanese hot dogs
  5. not Boards of Canada (fuck you for making up shit to look cool in front of me and then just never admitting it so I had to embarrass myself with that information to figure it out)

"But Cathy, they don't have the ingredient with no substitutions in the International Aisle at my Safeway? What can I sub for the ingredient with no substitutions?

You have to go to a big Asian supermarket or a small Japanese or Korean store and just hope it's in stock. It's out of mortal hands.

THE TERIMAYO

The Terimayo is a teriyaki-mayo dog. It's the most accessible Japadog to make at home.

WHAT YOU NEED

  • 1 hot dog (it doesn't have to be a fancy Kurobuta one)
  • 1 hot dog bun (I like brioche for these)
  • butter
  • teriyaki sauce
  • mayonnaise (pref. the good kewpie kind)
  • nori

HOW-TO

  1. Toast your nori. You can run it over an electric stove burner, hold it over an open flame, or hold it under the heating element in a toaster oven. When it's toasted, cut it into thin strips with a scissors. If you have a big Japanese or Korean store near you, then you can probably just buy toasted nori strips in a jar.
  2. Warm up your bun the way you like (I like to toast them in my toaster oven). Butter up the insides.
  3. Heat a pan over medium and add a bit of oil. Toss in your hot dog and fry on all sides until it's done to your liking.
  4. Put the dog in the bun, then top with a generous smear of teriyaki sauce, a zig-zag of mayo, and a dusting of toasted nori strips.

THE OKONOMI

The Okonomi has everything okonomiyaki usually come with. I've never actually had okonomiyaki, to be honest. I like the toppings, though.

WHAT YOU NEED

  • 1 hot dog (it doesn't have to be a fancy Kurobuta one)
  • 1 hot dog bun (I like brioche for these)
  • butter
  • okonomiyaki sauce
  • mayonnaise (pref. the good kewpie kind)
  • katsuobushi flakes
